I also would love to know this, I hunted through the wiki but could only find the option to enable ALL vanilla mobs. The Chatting NPCs look great, but the lack of villagers with professions further limits the availability of certain items.

For that you can override their respective Spawn Replacement file via Data Pack.
The original can be copied from inside the mod file (opened like a ZIP archive) under "data/pixelmon/spawn_replacement/villager.json" and added into your Data Pack under the same file path. There you can change "enabled" to false to deactivate the replacement.

However, keep in mind that removing Pixelmon NPCs will lock you out of some content accessed via Quests.

Really I feel like we need an option for Minecraft villagers to spawn simultaneously with Pixelmon NPCs, so we can both have quests and a bunch of villagers selling us useful things

Beyond the data pack, I found a mod to blacklist mobs you don't want spawning and got very excited... and then realized that both the config option and the data pack are an either/or choice. You either get vanilla villagers or you get Pixelmon NPCs.
